Keto Macaroni Salad


Keto Macaroni Salad
2 cups raw cauliflower broken into very small pieces
1/4 cup Mayonnaise
1 tsp. Sugar substitute
1 teaspoon cider vinegar
1 pack MCT 143
1 tsp. of salt
1/2 tsp. of pepper
1 tablespoon Dijon mustard
4tablespoons of thinly sliced celery
1/4 cup of chopped bell pepper
1/4 cup of chopped onion
1 teaspoon of grated carrot
1/4 cup chopped black olives

– Steam cauliflower.
– Combine mayonnaise, mustard, vinegar, MCT 143, salt, pepper, and sweetener and mix well. In a separate bowl, combine cauliflower, celery, carrot, onion, peppers, and olives.

– Pour mayonnaise mixture over and combine gently.

– Chill before serving.
